Tandoor Area Ventilation


ADF Foods Limited is a company based in India that is involved in the business of processed food products. Established in 1992, ADF Foods is known for its diverse range of ready-to-eat (RTE) and ethnic Indian food products. The company specializes in offering a variety of packaged foods that cater to different tastes and preferences, including Indian, Middle Eastern, and other international cuisines.



Challanges

The client’s kitchen place was installed with 30 Tandoor Ovens. Tandoor is a cylindrical kind of structure with a fire build at the bottom which heats the walls of the oven and the air inside to upwards of 900 degrees Fahrenheit. The kitchen space was limited and the room temperature used to go up to approximately 80 degrees Celsius when all the Tandoor ovens were put to work, also there was poor ventilation with limited scope for fresh air inlet.

Key Initiatives

All heat dessipating area covered with Specialised hood and extract all high temperature heat and through to the ambient. All operator feeded with cooled fresh air and baricate created between hot zone and working areas. All fresh air directed towards hot spot and then it will be exhausted to ambaient. All finished prodcut area feeded with fresh filtered and coll air by using Two stage eveaporative cooling technology


Key Impacts

The kitchen area temperature was brought down from 80 degree Celsius to well below 30 degree Celsius and further down with the help of fresh air circulation. This solution helped the client to use all the tandoor oven at a time and improve the production to the desired level, it also help in making conducive working environment for the employees

The client’s kitchen place was installed with 8 Nos of Contineus Fryers, each fryers having 18 KW contineus heating to oil and they product will be contineus fry and inspectyed at belt conveyor. All frying area having fumes and heat which increasing inside temperature and spoiling room atmosphere.
